Yamazaki is the whisky that started Japan's whisky story. Founded in 1923 near Kyoto by Shinjiro Torii under the House of Suntory, it holds the distinction of being Japan's first dedicated malt whisky distillery. Today Yamazaki is recognised around the world as the flagship expression of Japanese single malt whisky, admired for its layered, delicate character and its use of Mizunara, a rare Japanese oak, in the maturation process.

Shinjiro Torii chose the site at Yamazaki, on the outskirts of Kyoto, because the location sits at the confluence of three rivers and is known in Japan for its exceptional water quality, a factor long associated with fine tea ceremony water in the same region. The distillery began production in 1923 and released Japan's first domestically made whisky a few years later.

Over the following decades, Suntory continued to refine the distillery's approach, experimenting with different still shapes, fermentation methods and cask types. One of the most distinctive choices was the use of Mizunara oak, a Japanese oak species that is difficult to work with because it is porous and prone to leaking, but which imparts unusual notes of sandalwood, incense and dried fruit when used for maturation. This experimentation eventually shaped what the world now recognises as the Yamazaki style.

Yamazaki's global reputation grew sharply in the 2000s and 2010s as Japanese whisky won a string of major international awards, drawing serious attention from whisky critics and collectors who had previously focused almost entirely on Scotch. That recognition, combined with limited production capacity, has meant demand for Yamazaki has often outpaced supply, particularly for aged expressions.

The core Yamazaki range includes the No Age Statement Single Malt (sometimes labelled Distiller's Reserve in export markets), the Yamazaki 12 Year Old, and older, more limited expressions such as the 18 Year Old and 25 Year Old. Each expression blends malt whisky matured in a combination of American oak, ex-sherry casks, and Mizunara oak, with the proportion of each cask type shifting the final character of the whisky.

Yamazaki's defining feature is its use of Mizunara oak alongside more conventional American and sherry casks. Mizunara is slow growing, expensive to source, and technically challenging to cooper into barrels, which is part of why so few distilleries outside Japan use it. Older expressions such as the 18 Year Old and 25 Year Old exist primarily as collector and connoisseur releases and are rarely found on retail shelves at MRP.
